The most attentive of you will have surely noticed that there’s a new arrival among our group tour proposals: Prosecco and Amarone. We want to offer you the chance to discover two of the Veneto’s most important and renowned appellations, combining a visit to a winery specializing in the production of white and sparkling wines with a visit to one of the Valpolicella DOC.
Although the province of Verona is not included in the Prosecco production area, several wineries in eastern Verona own or manage vineyards in the province of Vicenza, and can therefore boast Prosecco DOC among their labels, undoubtedly Italy’s most famous sparkling wine. Prosecco is a simple and straightforward wine, whose sparkling qualities have become the star of aperitifs and toasts around the world. The star of this wine is Glera, a moderately aromatic white grape variety with good acidity, making it ideal for sparkling wine. The sparkling wine is then made using the Charmat-Martinotti method, in an autoclave, to preserve the freshness and aromas of the fruit.
Amarone, on the other hand, is a powerful red wine, the undisputed star of the Valpolicella DOC production area. The secret to Amarone’s complexity and intensity lies in the appassimento process, or drying, where the grapes rest for approximately three months before pressing and fermentation. This additional phase allows the water contained in the grapes to evaporate and the bunches to ripen further, resulting in a very sugary must and a full-bodied wine. With the same grapes, which for all wines from the area are mostly a blend of Corvina, Corvinone, and Rondinella, different results can be achieved by following different winemaking processes (Valpolicella, Ripasso, Recioto).
