Production area:

Vineyards in the locality of Cavreghe di Torbe (Negrar) with clay soil, Casale locality in Marcellise with soil of calcareous origin, and Monte Dei Santi locality (VR) with red flake soil of sedimentary origin.Located between 230 and 450 meters above sea level, with southwest exposures.

Veronese pergola, plantings of 1950, 1970 and 1995. Cluster thinning in August and harvest between the middle and the end of September, with manual harvesting and careful selection harvest in the vineyard. Yield 30 q.li/ha

Vinification:

Withering for 100/120 days, fermentation with pied de cuve in steel tanks without temperature control.

Aging:

Aging 60 months in tonneaux of 5 hl oak and 24/30 months in bottle. Sulfur dioxide less than 30 mg/liter

Service temperature:  14°-16°C.
