Vinification: the Recioto di Soave DOCG 2007 by Tenuta Trabucchi is a sweet wine of extraordinary complexity, a symbol of the winemaking tradition of the Val d’Illasi. It is made from 100% Garganega grapes from the historic Fondo Galante vineyard, situated at an altitude of approximately 200 meters. The vines are cultivated using Pergola Veronese, Spalliera, and Guyot systems to ensure balanced ripening and consistent quality.

Harvesting is done manually starting from the second half of September, selecting only the finest clusters. The grapes are then placed in drying rooms (fruttai) until February, losing between 70% and 75% of their natural weight. This process concentrates sugars, aromas, and structure, preparing the must for fermentation and subsequent ageing in French oak barrels.

Aging: in French oak barrel the wine evolves slowly, gaining creaminess, elegance, and aromatic depth.

Service temperature: 6-8°C

Description

Tasting notes

Appearance
In the glass, it displays a golden yellow hue with coppery reflections.

Bouquet
The nose is rich and enveloping, featuring notes of dried apricot, honey, white pepper, almond shell, and caramel, which reappear precisely on the palate.

Taste
The sip is sweet but perfectly balanced by well-measured minerality and savoriness: a creamy texture, long aromatic persistence, and an unmistakable finish of burnt caramel that harmonizes the wine’s natural sweetness. Truly one of the most refined expressions of Recioto di Soave.

Food pairings

Dry pastries, fruit tarts, blue cheeses, foie gras, and yellow fruit-based desserts.
