Vinification: the Valpolicella Superiore DOC “Terra del Cereolo” 2016 by Tenuta Trabucchi is crafted from Corvina Veronese, Corvinone, Rondinella, Oseleta, and Forselina—historic local varieties grown in the Fondo Cereolo di Sopra cru. The vineyards are situated at approximately 160 meters above sea level and are organically farmed using Pergola Veronese and Guyot training systems. The harvest is strictly manual, taking place from the second week of September through the end of October, selecting only the finest clusters.
The grapes undergo a partial drying process (appassimento) for 20–25 days in humidity-controlled environments, resulting in an average weight loss of 25%. This process concentrates aromas, structure, and complexity while preserving freshness.
Aging: following fermentation in stainless steel, the wine ages in French oak barriques, where it develops depth, character, and finesse.
The aromatic profile is distinctive and multi-faceted: notes of black truffle, graphite, mint, anise, cherry, prune, and chocolate open the bouquet, followed by balsamic hints, orange zest, lavender, and dark chocolate. On the palate, it reveals a robust structure supported by a vibrant acidity that tempers the alcohol, making the wine harmonious and pleasantly persistent. A Valpolicella Superiore of great identity, fully expressing the elegance and integrity of the Val d’Illasi terroir.
