Production and ageing: After manual harvesting, with careful selection of the best bunches, the grapes are delicately placed in wooden boxes, trays, where they will rest for the time necessary to reach the desired sugar level, about three months. Here they lose up to 40% of their initial weight, in particular Corvina undergoes a natural process of aromatic transformation through cellular respiration, which makes this wine unique in the world. Once pressed and de-stemmed, the fermentation takes place in small steel tanks where the must and the marc are worked for about 15 days with a submerged cap, which allows to minimize the risk of bacterial contamination and have an optimal extraction of substances. polyphenols without extracting lees and aggressive tannins on the palate. Subsequently the wine is drawn off with a high residual sugar characteristic of this noble nectar. Tasting Notes

Deep ruby ​​red color, with violet reflections. Intense hints of wild berries, cherry and black cherry jams, perfectly preserves the flavor of dried grapes. A few years after bottling, notes of dried figs and cloves develop. In the mouth it is enveloping, full, sweet and well balanced with the freshness that characterizes it.
