Grapes: Garganega 33%, Chardonnay 33%, Pinot Nero 33%

Vinification: the grapes of the different varieties are harvested separately and are soft pressed so as to obtain only the first run of the must which is used for the production of the base wines. When the fermentation process is finished these base wines are blended in order to obtain the cuvée which is then turned into sparkling wine by the traditional method.

Ageing: after bottling, the wine is placed in a cool cellar hewn out of the volcanic rock where in the following 6 years the wine will develop that extraordinary bouquet typical of fine high-quality Spumante which matures on the lees for a long time.

Service temperature:  4-6°C 

Description

A refined Spumante, a wine with a mineral structure able to surprise with unexpected aromas donated by the blend of Garganega, Chardonnay and Pinot Nero grapes. A product that comes from a slow processing (at least 6 years on its own yeasts) for an extended vitality and freshness.

Appearance
Straw yellow with dense, fine and persistent perlage.

Bouquet
 Fresh, complex and ample.
Taste
 Well balanced between the mature tones and the refreshing acidity.

Food pairings

Excellent as an aperitif, it pairs beautifully with first courses and seafood.
