Vinification: the Valpolicella Superiore Ripasso “Villa Trabucchi” 2018 originates from the estate’s most prestigious vineyards, located in the Fondo Monte Tenda and Castello areas at an altitude of approximately 200 meters. The grapes—Corvina Veronese, Corvinone, Rondinella, Oseleta, and Forselina—are hand-harvested starting from the second week of September, selecting only the healthiest and most mature clusters.
After a partial drying process of 20–25 days (resulting in a 25% weight loss in humidity-controlled drying rooms), the base wine ferments in stainless steel. It is then “passed over” (the ripasso method) the pomace of Amarone: a fundamental step that enriches the wine in structure, aromatic complexity, and body.
Aging: aging continues for 24 months in French oak barriques. In the glass, it presents an intense and deep ruby red. The nose is elegant, clean, and broad, with notes of cherry liqueur, chocolate, and ripe red fruit. On the palate, it is immediately sumptuous, robust, and full-bodied, yet rounded and velvety, with returning notes of cherries in spirit and cocoa. Hints of tobacco, licorice, and vanilla emerge, accompanying a long, warm, and enveloping finish. A Ripasso of great identity—powerful and harmonious—true to the finest traditions of Valpolicella Superiore.
