Grapes: White grapes from the territory

Vinification: after harvest, the grapes are brought to the winery, loaded whole into the press and gently pressed at 0.6 bar. Fermentation takes place spontaneously with indigenous yeasts, at controlled temperature.
Ageing: after a period of ageing on the lees in tank, fresh grape must is added, triggering a new fermentation of the entire mass thanks to naturally occurring sugars and yeasts. In vintages prior to 2023, the secondary fermentation in the bottle was carried out using dried grape must.
