Production: Destemming and soft pressing of the grapes; fermentation without adding sulphites with indigenous yeasts at a controlled temperature in a truncated cone oak vat for 7-8 days; daily pumping over and delestage; malolactic fermentation until completion in steel; post-fermentation maceration for about two months in the vat
Ageing: 5 months in steel tanks; 2 months in the bottle.
Service temperature: 16-18°C
Ruby red color of medium intensity, lively if young; fragrant nose, with delicate, floral, slightly fruity aromas (of fresh black cherry), combined with hints of spices (cinnamon, nutmeg, pepper). On the palate it has moderate alcohol content and tannins, good acidity, medium structure, sapid, fresh and highly drinkable.
