Qualification: Valpolicella Classico Superiore D.O.C.
Grapes: Corvina gentile, Corvina grossa, Rondinella, Molinara.

Production: Harvest By hand and started immediately at the pressing. Pressed softly in horizontal press at low temperature. Vinification in steel at controlled temperature and light afterwards criomaceration with hand-made fulling.
Ageing: After vinification in red, the wine is aged in steel containers where remains until MarchApril. Then the wine is aged in bottle for about 4 months before being placed on the market.
Service temperature: 14- 16° C
Wine with ruby red reflections and a nice consistency in the glass. Good verticality of aromas to the nose with a clear sensation of ripe cherry and fruits of forest. Spiciness of black pepper and cloves with a pleasant feeling slightly balsamic with fi ni herbs, rosemary and thyme. The palate is particularly elegant with clear and sinuous tannins. Good sapidity and strong structural freshness. Good persistence and delicately almond finish.
Perfect with spicy cured meats of the ancient Venetian tradition as well as medium cheeses seasoning preferably of a vaccine nature. Also ideal to accompany pasta dishes with white meat and red sauces. With traditional soups Veneto and Tuscany based on cereals and legumes, chickpeas, cicerchie, zolferini and borlotti beans.
