Qualification: Valpolicella Classico Ripasso DOC
Grapes: Corvina, Corvinone, Rodinella, Molinara
Production: the Valpolicella of the year is refermented with the pomace of the freshly obtained Amarone. In this way the wine in contact with the skins that derive from the grapes left to dry for about 3 months, still rich in sugars and aromas, acquires greater structure and complexity.
Ageing: for 4 and a half years in oak barrels and further completion in the bottle before being marketed.
Service temperature: 16-18 ° C
Ruby red in color tending to garnet. Intense notes of cherry, blackberry, with hints of spices. Wine of remarkable body, powerful but harmonious with elegant spicy veins, traces of black cherry and hints of wild fruit. The alcohol content is combined with the structure and elegance of the tannins.
It can be eaten throughout the meal with meat dishes and savory first courses. Excellent with aged cheeses.
