Production: After a careful selection of the most exposed and ripe bunches and a special manual harvest, the bunches are placed in wooden boxes and taken to the loft. After a long drying (about four months) in ventilated environments with a dry climate, the grapes are pressed. The must is then slowly fermented with maceration of the marcs for 25 days.
Ageing: Three years in large barrels and from 10 to 18 months in second passage barriques, plus 4 months of refinement in the bottle.
Service temperature: 16 ° - 18 ° in special glasses (Ballon)
Tasting Notes
It has an intense garnet red color. The olfactory profile of the wine is characteristic, intense and full-bodied; mellow and warm on the palate. Definitely alcoholic, with clear memories of flint and with hints of hazelnut and oak wood. Dry taste, moderate acidity, with a pleasant tannic background, austere and full-bodied.

It is perfect with roasts, grilled meats, spicy and aged cheeses.
